PDO
Widely acknowledged as a true delicacy, this cheese has a soft, thin, smooth rind whose colour is mostly grey with areas that are yellow or reddish in colour. The cheese's texture is silky smooth with varying degrees of cohesion, depending on how long it's been matured.

The milk for Cabrales cheese comes from the villages of Arangas, Arenas, Asiego, Berodia, Bulnes, Carmarmeña, Canales, Carreña, El Escobar, Inguanzo, La Molina, La Salce, Ortiguero, Pandiello, Puertas, Poo, Sotres, and Tielve, all located within the municipality of Cabrales and the villages of Oceño, Cáraves and Rozagás, located in the municipality of Peñamellera Alta.
Both the milk and the cheese produced from this milk are subject to comprehensive systems of monitoring and control in order to guarantee the product’s extraordinary quality.
