This is a tender and juicy red meat with a powerful aroma and an intense flavour and firmness due to the infiltration of fat.
REASONS TO ENJOY
Meat from the Guadarrama mountain range comes from livestock both born and bred in the Sierra de Madrid and then slaughtered in the same region. The species pertain to and/or are crossbred with Avileña Negra, Charolais and Limousine livestock. The calves graze free-range after being weaned at 5 or 6 months, after which they are grain-fed at feeding lots.
