REASONS TO ENJOY
The island’s local grass-fed cows provide the milk while age-old traditions do the rest. Truly an artisanal cheese, the curd is first wrapped in a white cloth and tied with a string before being pressed. In the ageing caves, the rinds are flipped and rubbed with olive oil and paprika.
Exclusive to the small island of Menorca, a UNESCO Biosphere Reserve located in the Mediterranean Sea, its low-lying pastures are salinized by the Tramontana winds while the mild, sunny climate provides many a dew-dropped morning. The abundant rain and humidity add just the right touches to make this cheese unique.
