Aliste, located in the western part of the province of Zamora in the region of Castille-Leon, is largely an undiscovered region. Nonetheless, it has a wealth of natural resources, a bountiful and rugged landscape, richly endowed with pastureland for livestock breeds that are receiving increasing acclaim.

The calves are raised in stables in order to protect them from the Iberian wolf (Canis lupus signatus) an abundant species here. The tender age of the calves and the fact that they feed on their mother’s milk makes the meat particularly unique and different, with singular and highly-regarded qualities.
